I have given an indication of when the wines
should be drunk according to my own taste. Storage
conditions can effect the rate at which wine ages;
ideally bottles should be kept in a cool (10°-14°C),
damp (+60% hygrometry), dark cellar protected
from vibration.
There is no ideal age for bottles to be drunk
at. I enjoy tasting wines throughout their life.
There are different attributes at every stage.
I personally like to decant and drink young wines.
It is like biting into juicy fruit. Decanting
airs the wine making the aromas evolve. It is
important to decant at cellar temperature (14°C).
The wine will heat up in the glass to a perfect
tasting temperature of 16-17°C when it is served.
Avoid serving fine burgundy warmer than 18°C.
Do not forget that good company goes well with
good wine. I raise my glass to your good health
